Crockpot Granola
This is the simplest, best, granola recipe. It's absolutely delicious, takes literally minutes to throw into the crockpot, and makes the house smell WONDERFUL too.
We use this in our fruit and yogurt bowl.
Ingredients
- 5 cup Oats
- ½ cup Coconut oil or salad oil
- ½ cup Honey
- 1 tsp Vanilla Extract
- 1 tsp Cinnamon, Ground
- 1 cup Coconut, Shredded -- unsweetened
- 1 cup chopped nuts -- your choice
Instructions
Cook on low for 5 hours or until brown, stirring occasionally. Make sure you keep the cover on the crockpot slightly cracked. The more frequently you stir, the finer the consistency. If you prefer clumpier granola, stir less.
Add raisins, dried fruits, chocolate chips...whatever you desire. This is delicious as a hot or cold cereal, as a snack, a topping for yogurt, or made into granola bars.
To make into bars: combine 2 cups granola w/2 beaten eggs, put in a lightly greased cookie sheet, bake at 350 for 15 minutes. Cut into bars and cool.
This keeps for several weeks in the refrigerator...I use a ziploc bag.
Orange Croissant French Toast
Ingredients
- 6 large croissants, cut into top and bottom halves
- 1 (9 ounce jar) orange marmalade
- 3 ounces orange juice
- 5 eggs
- 1 cup heavy cream
- 1 teaspoon almond extract
- strawberries , whole or sliced, for garnish
- OR fresh orange sections
- syrup of choice
How to make it
- Place the bottom halves of the croissants into a 13x9-inch buttered baking dish
- In small bowl, combine the marmalade with the orange juice, mix completely
- Spoon the thinned marmalade over each croissant bottom half, saving a little to be used as a glaze for the tops of the croissants
- Place the tops of the croissants over the croissant bottom halves
- In a medium bowl, beat together the eggs, cream, and almond extract
- Pour this mixture over the croissants
- Spoon the reamining marmalade over the top of each croissant as a glaze
- Cover the baking dish, and refrigerate 8-10 hours, allowing the croissants to soak in the egg mixture
- When ready to cook, remove from the refrigerator and allow to stand at room temperature for 45-60 minutes before baking
- Preheat the oven to 350 degrees
- Bake uncovered for 25 minutes
- Garnish with stawberries and or mandarin orange sections (or other oranges)
